Hemp Seed Banana Muffins

Ingredients

2 tablespoons ground flax seeds
6 tablespoons of water
1 cup all-purpose gluten-free flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon of sea salt
1/2 cup coconut palm sugar
1/2 cup of melted coconut oil or grapeseed oil
2 ripe bananas
1 teaspoon vanilla extract

Instructions
Preheat the oven to 325F. Prepare a muffin pan with parchment paper. Mix flax seeds with warm water in a separate bowl. In another mixing bowl, mix baking powder, flour, baking soda, and salt. In the first bowl, take your two bananas and smash them into the flax seeds. Then add oil, sugar, and vanilla extract. Mix thoroughly. Add ingredients to another bowl filled with baking powder, baking soda, and salt. Mix well. Add in hemp seeds to the mixture and stir. Scoop into your muffin pan evenly. Bake for approximately 25-30 minutes or until golden brown. Cool for 15 minutes before serving.

Spiced Matcha Latte

Matcha preparation requires covering tea plants with shade cloths before harvesting. The tea plant is then hand-selected, steamed to stop fermentation, then dried and aged in cold storage, which deepens the flavor. The dried leaves are then stone-ground into a fine powder. Matcha has a more potent source of nutrients than steeped green tea. In addition to providing minerals and vitamins, matcha powder is rich in antioxidants termed polyphenols.

Ingredients
3 ounces of boiled water
8 ounces non-dairy milk
1 teaspoon matcha green tea powder
1/4 teaspoon cinnamon
1/8 teaspoon turmeric
1/8 teaspoon ginger

Instructions

Boil 3 oz of water and then add water to a mixing cup. Next, add matcha tea powder, cinnamon, turmeric, and ginger into the water. Whisk until everything is dissolved. Warm the non-dairy milk in a mug, then add the spiced matcha water mixture to the milk. Whisk and then enjoy!

Matcha Almond Tea Cake Recipe

Take matcha to the next level with this delicious recipe we call matcha almond tea cake. Your guest are sure to love it!

Ingredients:

Coconut oil for loaf pan
3 eggs
1/2 cup almond milk
1/2 cup butter

3 cups almond flour
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/3 cup whey protein powder
1 tablespoon matcha green tea powder
1/2 teaspoon salt
1/2 cup raw cane sugar
20 drops stevia extract
1 teaspoon almond extract
2 tablespoon water

Instructions:

Preheat your oven to 300°F. Apply coconut oil to a loaf pan. Whisk hot water and matcha powder together in a mixing bowl until smooth. In a separate mixing bowl, whisk together baking powder, almond flour, protein powder, baking soda, and salt. In a large mixing bowl, whisk butter until it turns smooth. Add granulated erythritol and whisk until well-combined for about 2 minutes. Mix in the eggs, stevia extract, almond extract and then slowly pour your almond flour mixture with matcha powder until well-combined. Pour into the loaf pan evenly and place into the over. Bake for 60 minutes. Then allow your matcha almond tea cake to cool before serving.
