An Endemic Australian Mushroom

Our Turkey Tail is an endemic Australian species, cloned from a wild specimen and cultivated organically in the Yarra Valley. It is 3rd party tested for purity in an Australian laboratory.

How It's Grown

The mushrooms are grown and fruited using the Paul Stamets method on a substrate of brown rice. The fruit body forms on the substrate and makes up around 70–80% of the final product — the rest is mycelium and a small amount of leftover myceliated brown rice.

From Farm to Jar

After harvest, the mushrooms are gently heat treated for food safety, which also breaks down the tough cell walls and chitin to improve digestibility. The fruit body, mycelium and myceliated brown rice are then freeze dried and powdered.

The result is a 100% wholefood powder containing both fruit body and mycelium. Many of the mushroom's naturally occurring compounds are found in the mycelium as well as the fruit body — Paul Stamets, one of the world's leading mycologists, recommends including the mycelium for the full spectrum of what the mushroom has to offer.

Suggested Use

Use 1 teaspoon (~2g) per serve:

• Tea: rehydrate in hot water and brew — add honey to make it extra delicious
• Coffee: brew it straight in with your morning cup
• Warm milk: add a cup of milk and a level teaspoon to a pot and warm while stirring — plain, or with hot chocolate powder or honey (really tasty just with milk, and our favourite method so far)
• Extra special: add some Freeze Dried Chaga Extract to your brew
